Every two weeks we (well, usually
Cass and the children) go to a friends place to pick up a box of organic fruit and veg from a friend that organises a co-op. It's great value, and we don't tend to need to buy a great deal of vegetables outside this little arrangement (although sometimes we need additional fruit for children's lunch boxes). One of the items that we almost always get in the box is about 1kg of potatoes. Now, Cass doesn't really like to eat a lot of potato, so this proves a challenge. So, if you have any potato-based vegetarian recipes you could try shooting them out way and I might give them a spin. One of the recipes that I have found that everyone will eat is for oven-baked chips.

Oil
Seasonings to put on chips. I usually use, salt, pepper, fresh rosemary from the garden, sumac and dried thyme leaves.
Method
Get some potatoes. To feed our family I used this many:
I then scrubbed them so that all the dirt was gone (oddly enough). You could peel them if you want, but that seems awfully labour-intensive for basically no purpose:
Then you take the potato and cut both ends off and stand them up:
Cut 'em. The potato I'm using in these pictures is pretty small, so you can see that I've just cut them both ways until the chips are about the right thickness for the audience (this took me some trial and error). About this time I tend to put the oven on to pre-heat at about 220c.
Once they are all cut up, chuck them in a bowl. Add as much seasoning as you like. You need to put in some oil at this stage, so they've all got some coating. Helps the herbs and seasonings stick to the potato too.
Then put them on baking trays. I'm only using tin foil here because we're out of baking paper
(the picture on top is a little blurry because I got oil on the lens from the cooking).
Chuck them in the oven for about 45 minutes, turning after about 25 or 30. I generally give them a shake rather than worry about turning each individual chip. Then they'll be done, and the next thing you need to do is to completely fail to take a photo for your blog. I'll try to remember next time. Anyway, the family ate them all and were happy, and now we have fewer of those pesky potatoes lying around...
